Hello! Last night I tried a new recipe and it was so good I wanted to share it with you. I used boneless, skinless chicken thighs but you can use and pieces of chicken you want. This is my plate, I remembered to get a shot after I had started to cut my meat. Actually, it was so tender it almost fell apart!!! I just found my recipe on the internet. My poor cookbooks are VERY neglected, most are still packed!!!!
 Here are my ingredients assembled.
 The teriyaki sauce simmering.
 We started with a few shrimp as a little appetizer.
 Of course a nice glass of Pinot Grigio was my drink of choice:) Sorry about the bulb in the vase in the background. I had just gotten the vase and the bulb and had it there on the counter:) I am trying to grow a bulb of lilly in this vase, I'll let you know how it works:)
 We made a cocktail sauce of horseradish, ketchup and lemon juice. YUM!!!
 Since we had the shrimp, we just had a nice salad with our chicken. I mixed together baby spinach, torn romaine, tomatoes, green pepper, a LITTLE cheese, cucumber and mushrooms. I also made a home made dressing. I will give you both recipes at the end of this post.

Baked Teriyaki Chicken:
Ingredients
1 TBSP. cornstarch
1 TBSP. cold water
1/2 cup white sugar
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 tsp. ground ginger
1/4 tsp. ground black pepper
6 skinless chicken thighs
Directions:
In a small saucepan over low heat, combine the cornstarch, water, sugar, soy sauce, vinegar,garlic, ginger abd black pepper. Let simmer, stirring frequently until sauce thickens and bubbles.
Preheat oven to 425.
Place chicken in a lighly greased 9 by 13 pan. (I suggest lining your pan with foil as the sauce will stick to your pan and be hard to wash).  Brush the chicken with the sauce, turn over and brush the other side.
Bake in the preheated oven for 30 minutes. Turn pieces over and bake another 30 mins. (I only did 15 more mins., my thighs were done). Brush thighs with sauce every 10 mins. while cooking.

Poppy Sesame Vinagrette
4 Tbsp. sesame seeds
2 Tbsp. poppy seeds
1/2 cup olive oil
1/2 cup vegetable oil
1/2 cup white wine vinegar
1/2 cup cider vinegar
1/2 tsp. paprika
4 tsp. minced dried onion
1 tsp. dried orange peel
3/4 cup sugar
Mix all ingredients in a shaker and ENJOY!!!!!!!!!!!
